I usually follow a paleo diet most of the time, but I’m also a big fan of the Whole30 diet because it’s sustainable for me and gives great results. It’s pretty similar to the paleo diet too, so I don’t have to make too many adjustments. This mayo recipe fits the Whole30 diet with its low carbs and nutrient-dense profile, not to mention it fits my mommy lifestyle as well—quick and easy to make at just 3 minutes with minimal clean-up. Don’t let the short list of ingredients fool you though—the mixture of lemon juice, mustard powder, and avocado oil all work together to ensure that this mayo is full of flavor.

Ingredients

    • 1 large egg, at room temperature
    • 1 tsp lemon juice
    • ½ tsp mustard powder
    • 1 cup avocado oil
    • salt to taste

Directions

  1. Place the egg, mustard powder and lemon juice in the blender cup or jar that just fits the head of your immersion blender.
  2. Add the avocado oil and allow to settle for 15 seconds.
  3. Place head of immersion blender at the bottom of cup and turn it on high speed.
  4. Do not move the head for 30 seconds or until a white, creamy, thick mayo forms at the bottom by the head.
  5. As mayonnaise forms, slowly tilt and lift the head of the immersion blender until all oil is emulsified.
  6. Season to taste with salt.
  7. Store in an airtight container in the refrigerator for up to 10 days.
