Mind-Blowing Vegan Mayonnaise (Yum!) – Heart Healthy Mayo Substitute

One of the great things about the paleo diet is how it can be adapted to meet the needs of so many different people. It doesn’t matter what kind of lifestyle you lead; it can be adapted to fit yours, too. My vegan friends are the same way with the vegan diet; they’ve shown me time and time again how veganism could work for me. This is one of the recipes they showed me as proof of that, and what better way to convince me than with an excellent mayo recipe? I’m a shameless mayo fan so there’s really no such thing as too much mayo with me. This recipe is made with raw macadamia nuts, avocado oil, Himalayan pink salt, Dijon mustard, lemon juice, and a fresh date. It’s loaded with healthy fats, essential vitamins and minerals, so it’s good for you without a doubt. But the flavor itself is absolutely fantastic. Definitely a favorite for me!

Ingredients

    • 1 cup raw macadamia nuts, soaked in water for 30 minutes
    • ¼ cup lemon juice
    • ¼ cup avocado oil
    • 1 fresh date, pitted
    • ½ tsp Himalayan pink salt
    • ½ tsp Dijon mustard
    • 5 tbsp water

Directions

  1. Place the macadamia nuts, lemon juice, avocado oil, date, salt, mustard and water in a high speed blender and blend until smooth.
  2. Store in an airtight container in the refrigerator for up to 7 days.
