Sweet Potato Noodles – A Healthy Alternative to Pasta

While most people following paleo style diets tend to shy away from starchy vegetables, an exception should definitely be made for sweet potatoes. Unlike white potatoes and other forms of starchy carbs, sweet potatoes don’t cause a drastic glycemic response, meaning they help keep your blood sugar levels stable. (1,2) This is because their natural sugars are released slowly into your bloodstream, rather than all at once.

In addition to this, sweet potatoes are loaded with vitamins and minerals. In fact, they are one of the best sources of vitamin A and beta-carotene available. They are also great sources of vitamin C and D, both of which help support the immune system and are required by your body to function properly. (3)

By using spiralized sweet potato noodles along with chives for added flavor for your waffles, you can take what is normally a breakfast meal that’s high in sugar and turn it into an incredibly healthy option that’s paleo-friendly.
