Ingredients
- 1 pound sweet potato, peeled
- 2 eggs, beaten
- 2 tbsp olive oil, plus extra for greasing
- ¼ tsp garlic powder
- ¼ tsp chili flakes
- 3 tbsp chopped fresh chives, plus extra for decoration
- Salt to taste
Directions
- Spiralize sweet potatoes into noodles.
- Preheat 2 tablespoon olive oil in a large skillet over medium heat.
- Add sweet potato noodles and stir.
- Cover and cook for 5 minutes, stirring occasionally, until noodles are soft.
- Remove from the heat.
- In a large bowl, add noodles, eggs, garlic powder, chili flakes, and chive.
- Season with salt to taste.
- Stir well.
- Preheat waffle iron and coat it with oil.
- Ladle half of the mixture and cook 10-15 minutes, or until golden and crispy.
- Repeat with the rest of the mixture.
- Sprinkle with extra chopped chive.
- Top with desired toppings and serve.
