Ingredients
- 3 pounds whole chicken
- 2 tbsp water
- ½ lemon, sliced
- 2 tbsp honey
- 6 garlic cloves, minced
- 3 tbsp olive oil
- 1 ½ pound carrots, peeled and quartered lengthwise
Directions
- Preheat oven to 475ºF.
- In a small bowl mix water, honey, olive oil, garlic and pinch of salt.
- Place the chicken, breast-side down, on a cutting board.
- Using sharp kitchen scissors, cut closely along each side of the backbone.
- Remove the backbone.
- Turn the chicken, breast-side up, and press firmly on the breastbone with your palm to flatten.
- Place the chicken in a large baking dish. Generously season with salt.
- Arrange the carrots around the chicken.
- Drizzle the chicken and carrots with honey mixture.
- Top the chicken with lemon slices.
- Bake until the chicken is cooked through and skin is golden, 25 -30 minutes.
- Let chicken rest for at least 15 minutes before slicing.
- Serve with roasted carrots and extra pan juices.
