I’ve been obsessed with making sheet pan dinners as of late. They’re just such an easy and convenient way to make a wholesome family dinner. One of my favorite paleo sheet pan recipes is the one I’ll be sharing today for making sheet pan roasted broccoli and sweet potatoes. If you want to talk about a winning combination of ingredients, then broccoli and sweet potatoes should be near the top of that list. They’re both terrific paleo-friendly options that provide a ton of great health benefits. And while sweet potatoes are admittedly a little high in carbs, they actually contain a type of starch that is digested slowly, meaning they won’t cause any sudden spikes in blood sugar levels. This makes them a fantastic option to include on the paleo diet for anyone who’s been craving potatoes.

Ingredients

    • 1 head broccoli, cut into florets
    • 1 large sweet potato, peeled and cut into 1 inch cubes
    • 3 tbsp olive oil
    • 1 tbsp chopped fresh rosemary or 1 tsp dried rosemary
    • 3 garlic cloves, minced
    • salt, black pepper to taste

Directions

  1. Preheat oven to 425°F.
  2. In a large bowl place the broccoli florets, sweet potato, garlic, olive oil and rosemary.
  3. Toss to coat.
  4. Season to taste with salt and black pepper.
  5. Transfer to a baking sheet.
  6. Roast in preheat oven for 25 minutes or until lightly brown and tender.
  7. Remove from the oven and serve.
