Creamy Paleo Crockpot Broccoli Soup (So Good!)

The crockpot is one of my best investments yet. I use it for almost all of my soup and stew recipes because it cuts down a lot of cooking time, and I don’t have to watch it for hours on end. I just throw all of the ingredients into the pot and it’s done by the time I get home from work. The best part about this paleo crockpot broccoli soup is that because it has plenty of time to slow-cook, so the garlic, onion, herbs and spices really soak into the chicken stock, leaving you with a tasty broth that even the kids will enjoy.

Ingredients

    • 8 cups chopped broccoli (steams and florets)
    • 1 medium onion, chopped
    • 1 leek, chopped
    • 1 stalk celery, chopped
    • 2 garlic cloves, minced
    • ½ tsp dried thyme
    • 2 tbsp chopped fresh parsley plus extra for serving
    • 1/2 tsp cayenne pepper
    • 2 cups water
    • 4 cups homemade chicken stock
    • 2 tbsp extra-virgin olive oil
    • ½ cup full fat coconut milk plus extra for serving
    • salt, black pepper to taste

Directions

  1. Place the broccoli, onion, garlic, leek, celery, parsley, thyme, cayenne pepper, olive oil, water and chicken stock in a slow cooker and stir to combine.
  2. Cover with a lid and cook on high for 4 hours.
  3. Blend or process the soup in batches until smooth.
  4. Return to the cooker and stir in the coconut milk.
  5. Cover and cook on high for about 30 mins or until the soup is hot.
  6. Season with salt and black pepper to taste.
  7. Divide the soup between serving bowls, drizzle with extra coconut milk, sprinkle with extra chopped parsley and serve.
