When I first bought my instant Ppt, I scoured the web for paleo recipes to make with it, Let me tell you, there were a lot. At first it was almost overwhelming because there were so many different options out there. Over the years, I’ve tried a huge number of them and today I’m delighted to share one of the best ones. This paleo instat pot pizza soup is always a crowd favorite it’s not your typical soup, but it tastes fantastic especially when served hot. I love the mushrooms, black olives, Italian sausage and pepperoni together. It’s literally all that’s good about pizza in soup form.

Ingredients

    • 1 tbsp olive oil
    • 1 medium onion, diced
    • 10 oz mushrooms, sliced
    • 3 oz Paleo friendly pepperoni, diced
    • 1 pound Italian sausage, casing removed
    • 1 tsp dried oregano
    • 1 tsp garlic powder
    • 1 ½ cup homemade pizza sauce
    • 1 ½ cups water
    • 1 (14 oz) can diced tomato with basil
    • 2 tbsp sliced black olives
    • salt, black pepper to taste

Directions

  1. Press the SAUTE button on the Instant pot and let stand until screen reads “HOT”.
  2. Add the olive oil.
  3. Add the onion, mushrooms and pepperoni and cook, stirring occasionally for 2-3 minutes.
  4. Add the Italian sausage and cook until no longer pink.
  5. Press the CANCEL button.
  6. Add the dried oregano, garlic powder, pizza sauce, water and diced tomato.
  7. Stir to combine.
  8. Close and seal the Instant pot.
  9. Turn the venting knob to SEALING.
  10. Press PRESSURE COOK button and check to make sure the pressure level shows as “High” on the display.
  11. Adjust the timer to 5 minutes.
  12. When finished cooking, let the pressure come down naturally for 5 minutes, then quick release the rest of the pressure.
  13. Open the lid.
  14. Season to taste with salt and black pepper.
  15. Serve warm, topped with black olives.
