More Paleo Carrot Cake:
- 1 cup almond flour
- 1 tbsp coconut flour
- ¼ tsp baking soda
- ¼ tsp cinnamon
- 1 egg, lightly beaten
- 4 tbsp melted coconut oil
- 3 tbsp honey
- 1 tsp pure vanilla extract
- 1/3 cup grated carrot
- ¼ cup raisins
- ¼ cup chopped pecans plus pecan halves for decoration
- In a bowl place the almond flour, coconut flour and baking soda and mix to combine.
- Add the egg, coconut oil, honey, pure vanilla extract, raisins, chopped pecans and grated carrot and mix to combine.
- Cover with plastic foil and refrigerate for one hour.
- Preheat oven to 325ºF.
- Line a baking sheet with parchment paper.
- Spoon 1 tablespoon of the batter onto the baking sheet for each cookie.
- Press a pecan half into each ball.
- Bake for 18-20 minutes.
- Remove from the oven and let cool completely.
- Store the cookies in the refrigerator in an airtight container.
