Red Pepper Tomato Gazpacho Recipe

Have you ever had a soup that was so tasty you couldn’t help but make it multiple times in a week? That’s the sort of soup we’re making today.

When I first tried tomato gazpacho I thought there was some mistake and they had forgotten to heat it up. But knowing now that it’s supposed to be served chilled it’s definitely one of my favorite soups to make and a big hit on a hot day.

Gazpacho Ingredients

Tomatoes form the base of the soup, and it’s really just a matter of blending them up along with the other ingredients. Each ingredient has been selected for its feature of tasting great without the need to cook it, and served cold.

On a health note, you’re getting lycopene from the tomatoes, as well as other nutrients so it’s not just a tasty soup but also one that improves your wellbeing.

How To Make Gazpacho

Cucumber is the next main ingredient and also makes it a deeply hydrating meal, perfect for hot summer days when we tend to lose more moisture from sweat. It’s important to peel the cucumber before blending it up because the peel is just a little too thick and would mess up the consistency of the soup.

Try this as a light lunch or dinner when things are hot outside. It’s great because a) you don’t have to use your stovetop and heat up the whole kitchen and b) you don’t have to have a steaming bowl of soup in front of you making you hotter than you already are.

Tomato Gazpacho In Bowl

Because we’re not cooking any of the vegetables for this soup it’s important to get them when they’re at their freshest. Try finding them at a farmer’s market and buying them locally. You can really taste the difference, the same way you can taste the difference between fresh tomatoes and canned.

You can get away with serving this gazpacho after 30 minutes in the fridge, but really the hotter it is outside the colder you’ll want to serve it up. If you want to speed things along try putting in the freezer for 15 minutes and then finish cooling it in the fridge for an additional 15 minutes. I like to chill it for several hours for the best experience.

Gazpacho Soup With Tomato

Bring this to your next picnic or outdoor potluck event and it’s sure to be a hit. There will likely be someone there that hasn’t tried gazpacho before and they’ll be hooked. It’s one of those dishes that seems fancy, but is so easy to make.


Ingredients

    • 2 lb ripe and chopped tomatoes
    • 1 large cucumber, peeled and chopped
    • 2 large red bell peppers, deseeded and chopped
    • 2 garlic cloves, minced
    • 1 tbsp (15 ml) lemon juice
    • 4 tbsp (60 ml) olive oil
    • salt, pepper to taste
  • For garnishing
    • 2 tbsp chopped tomato
    • 2 tbsp chopped cucumber
    • olive oil for drizzling
    • basil leaves for decoration, optional

Directions

  1. In a blender place the tomatoes, cucumber, garlic and red pepper. Blend until smooth. Add the olive oil and lemon juice. Season with salt and pepper to taste. Blend again to combine.
  2. Pour the gazpacho into a pitcher and place the pitcher in a fridge to cool for at least half an hour.
  3. To make the garnish, in a small bowl combine the tomato and cucumber. Serve the gazpacho drizzle with olive oil and garnish with chopped veggies and fresh basil.

Simple to prepare, gazpacho is really about using high-quality ingredients and adjusting the seasonings to taste. An immersion blender leaves a slightly rougher texture, while a blender will make the soup completely smooth. Add a little water only if necessary, to make the soup creamier.

Garden Vegetable Gazpacho Recipe

Ingredients

5 ripe tomatoes, chopped
1 green bell pepper, chopped
1/2 cucumber, peeled, seeded, and chopped
1/2 red onion, chopped
1/3 cup extra virgin olive oil
1/2 cup almonds
2 cloves garlic
3 tbsp red wine vinegar
1 jalapeno, seeded and chopped
1 tsp fresh lime juice
2 tbsp fresh cilantro, plus more for garnish
Salt and pepper, to taste

Instructions

1. Place all of the ingredients in a large bowl. Use an immersion blender to process until the soup reaches your desired level of smoothness. Alternately, place the ingredients in a blender and pulse until smooth. Season to taste with salt and pepper. Refrigerate for 1-2 hours before serving.

2. Tomato-less White Gazpacho

This tomato-less version of gazpacho is composed instead of cucumbers and green grapes, and should be served chilled. White gazpacho is incredibly easy to prepare and can be very refreshing when the weather outside is hot and humid.

White Cucumber Gazpacho

Ingredients

1/2 cup almonds, blanched
2 large cucumbers, peeled and chopped
2 cups green grapes
3 cloves garlic, minced
1 cup cold water
1/4 cup extra virgin olive oil
2 tsp red wine vinegar
1/2 tsp salt
Green onions, for garnish

Instructions

1. Add all of the ingredients into a blender and pulse until completely smooth. Chill for 30 minutes before serving. Serve cold with green onions for garnish.

  1. Do you think I could freeze this Tomato & Red Pepper Gazpacho? I have a ton of tomatoes, peppers and cucumbers in my garden.

  2. This recipe is amazing! It tastes great and omits unhealthier ingredients such as bread and replaces vinegar with lemon. I was not expecting the recipe to taste so similar to gazpacho, but it really does and has lots of flavor. Thank you for the recipe!

  3. Very good! I added a teaspoon of apple cider vinegar and some lemon zest for additional health benefits and zing. Very good soup and tastes better the next day after the flavors have melded.
