After preheating your oven to 300°F, add your cauliflower florets into a food processor and pulse them until the mixture has the same consistency as rice. Take your new cauliflower rice mixture and add it into a microwave safe bowl with some salt.

- For the bread:
- 1 pound cauliflower florets
- 6 eggs, separated
- 1 1/4 cup almond flour
- 1 tbsp baking powder
- 6 tbsp olive oil
- salt to taste
- For topping:
- 3 tbsp olive oil
- 4-5 garlic cloves, minced
- 1 tbsp chopped parsley
- salt to taste
- Preheat oven to 350°F.
- Place the cauliflower florets in a food processor and pulse until the mixture resembles rice.
- Place the cauliflower rice in a microwave safe bowl and sprinkle with pinch of salt.
- Mix to combine.
- Cover with a lid.
- Microwave at 600W for 5 minutes.
- Remove from the microwave oven and allow to cool completely.
- Using a clean dish towel or cheese cloth, drain the cauliflower completely, removing as much water as possible.
- Transfer the cauliflower to a large bowl.
- Add the egg yolks, almond flour and baking powder.
- Season to taste with salt.
- Mix to combine and set aside.
- In another bowl add the egg whites and beat on medium speed until the egg white form stiff, glossy peaks.
- Fold the egg white into the cauliflower mixture.
- Line an 8×4 inch loaf pan with parchment paper.
- Transfer the batter into the prepared pan.
- Bake in preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and allow to cool completely before slicing.
- To make the topping, combine all the ingredients in a small bowl.
- Slice the bread into 12 slices.
- Toast the bread under broiler.
- Remove from the oven and brush bread liberally with topping.
- Return to broiler and brown 30 seconds.
- Serve warm.
