Easy 4-Ingredient Egg Free Paleo Mayo (Food Processor Recipe)

In order to make paleo-friendly mayonnaise recipes from scratch, you’re going to have to use eggs...most of the time. For any of our readers out there who have a sensitivity to eggs, this one is for you. I first discovered this recipe when I was looking for egg-free recipes for one of my guests. She has an egg allergy, so whenever she comes over, I make sure to make something that everyone will love without making her feel left out. The mayo part in recipes used to stump me because I felt that the recipes I found online didn’t quite do the trick, so I adapted them and made this version with coconut butter and olive oil (aim for authentic extra-virgin olive oil). These together give me the texture I’m looking for as well as the heart-healthy benefits. Seasoned with garlic powder and lemon juice, this egg-free mayo ended up so much better than expected and has quickly become the go-choice even among my guests who have no problems with consuming eggs.

Ingredients

    • ¼ cup coconut butter, at room temperature
    • 5 tbsp extra virgin olive oil
    • ½ tsp garlic powder
    • 1 tsp lemon juice
    • ¼ cup warm water
    • salt to taste

Directions

  1. Place all the ingredients in a food processor and process until well combined.
  2. Season to taste with salt.
  3. Store in an airtight container in the refrigerator for up to 2 weeks.
  4. Remove the mayo from the refrigerator 15 minutes before serving to allow it to soften.
