These cupcakes look very nice when they’re all put together, and they only contain ingredients that are Paleo approved. This means getting rid of the all-purpose flour found in almost every conventional cupcake, and replacing it with coconut flour instead. This will give the cupcakes the light texture they need, as well as a nice flavor. But the real show-stealer here is the date pudding that goes on top of them. They include a separate recipe for that so you can get both portions of these cupcakes going at the same time.

This cake is broken down into two layers, and is cooked upside-down fashion. Yes, you can eat truffles on Paleo. Should you eat them everyday? No. You don’t really want to get into the habit of eating any one thing everyday, because that’s not how they ate back in caveman times. They were hunters and gatherers, so their diet changed daily, or at least very frequently. Every once in awhile you may have to satisfy your modern cravings with one of these coffee coconut truffles, a pure indulgence that will rock you to your Stone Age core without using any unnatural or impure ingredients.

Don’t worry, you’ll live to tell the tale of this chocolate monstrosity. They start by using their chocolate skillet cake recipe, and then add to it further to make it even more chocolatey and delicious. They’ve taken a few liberties here, which you’ll want to adjust if you want it to be purely Paleo. For example, they’re using whipped cream, which you can either let slide, or whip up a batch of whipped cream using coconut milk. You don’t want to get into the habit of nixing a recipe just because it has one or two things that aren’t Paleo. You simply make some adjustments and carry on.

These little “mounds of joy” are inspired by the candy bars Almond Joy and Mars. You probably know the jingle of sometimes feeling like a nut, and sometimes not. The unbelievable part is that it uses just five ingredients so you don’t have to stock up on a lot of items in order to make it. A great recipe to have up your sleeve for unexpected guests and impromptu get togethers.

  1. OK … how about for someone trying to do Paleo who also has a nut allergy? I’m trying to help my wife and found ZERO things on the list she can eat! 🙁

    • Michael: Danielle Walker over at AgainstAllGrain has lots of nut-free recipes! Also, Lea over at PaleoSpirit has some nut-free recipes and nut substitutions (her son has a nut allergy as well). I know there are a lot more out there, and once you find one good source they tend to lead to others.

    • Most nut allergies do not include coconut, so you could do a coconut based icecream, but if coconut is out you could do a sorbet sweetened with agave. If you want to do chocolate I suggest getting a high quality unsweetened cocoa powder.

    • How about seeds? is she allergic to seeds as well? try substituting nuts for sunflower or pumpkin (pepitas) seeds! they are delicious and have the characteristic nutty flavor!
