I don’t come across many “must try” slow cooker recipes because I already have so many, but I had to make an exception for this paleo slow cooker homestyle sweet potato soup. I was never a huge fan of sweet potatoes but ever since I switched to the paleo diet, I’ve tried different ways of incorporating it into my family’s meals. A soup like this one really helps me introduce more paleo-friendly vegetables and meal ideas to my kids without sacrificing taste. The creamy texture looks like something out of a restaurant, too.

Ingredients

    • 2 pounds sweet potatoes, peeled and cubed
    • 1 celery stalk, chopped
    • 2 garlic cloves, minced
    • 2 tbsp olive oil
    • ½ tsp ground cumin
    • ½ tsp ground coriander
    • ½ tsp cayenne pepper
    • 3 cups homemade chicken stock
    • 1 cup coconut milk
    • salt and black pepper, to taste
    • ½ tbsp sliced almonds, to serve
    • 1 tbsp chopped fresh coriander, to serve

Directions

  1. In the slow cooker place the sweet potatoes, garlic, celery, olive oil, ground cumin, ground coriander, cayenne pepper, chicken stock and coconut milk.
  2. Season to taste with salt and black pepper and mix to combine.
  3. Cover with a lid and cook on high heat for 3 hours.
  4. Use an immersion blender or food processor and puree the mixture until smooth.
  5. Divide the soup among bowls.
  6. Top with sliced almond and chopped coriander and serve.
