With that in mind, for the last few weeks I keep coming back to this great recipe for making an easy 5-ingredient crockpot paleo chicken soup. Since the recipe calls for such a small number of ingredients, it’s important to make each one of them count, and I can happily report that’s definitely the case here. Onion, celery, carrots, and parsley all go together beautifully with the chicken breasts to make one of the most satisfying bowls of paleo chicken soup that you’ll ever try. When you’re craving for something simple that does the job, this is an excellent option.

Ingredients

    • 2 pounds bone-in, skin-on chicken breasts
    • 1 medium onion chopped
    • 3 celery stalks, sliced
    • 3 large carrots, sliced
    • 1 tbsp dried parsley
    • salt, black pepper to taste
  • For decoration (optional):
    • chopped fresh parsley

Directions

  1. Place the chicken, onion, carrot, celery and dried parsley in a crockpot.
  2. Add 4 cups of water.
  3. Season to taste with salt and black pepper.
  4. Cover with a lid and cook on LOW for 6-8 hours.
  5. Remove the chicken from the crockpot.
  6. Discard the skin and bones.
  7. Shred the meat with 2 forks.
  8. Add the meat back to the crockpot.
  9. Taste and add more salt or black pepper if necessary.
  10. Serve warm.
