Completely aside from the joy of not having to be blasted with heat from the oven, I think raw desserts have a deeper and more decadent flavor. For example, using cinnamon in a recipe. It tastes more prominent when it’s not baked and it’s still in raw form. This is all speculation and I might just be slightly crazy and there’s probably no difference but either way, no-oven desserts are always delightful to make.
Since I can remember I have had this terrible sweet tooth—especially late at night, like right before bed time sweet tooth. Almost like magic, it quickly processes all your food together—I can’t imagine the healthy life without it. Ingredients
- 1 cup dates, pitted and chopped
- ½ cup raw almonds
- 1 tbsp. cocoa powder
- 1 tbsp. pure maple syrup
- 1 tbsp. unsweetened desiccated coconut, plus more for rolling
Directions
- Place your dates in a food processor on high until a ball forms.
- Use your hands to separate the date ball into pieces and place it back in the food processor with the almonds.
- Pulse until almost smooth.
- Add the cocoa powder, maple syrup and coconut into the food processor and continue on high until completely incorporated.
- Roll your energy bites into 9 evenly sized balls.
- Roll balls in desiccated coconut until completely coated.
- Store in an airtight container.
