Make-Ahead and Freezing Instructions:

To Make-Ahead: Follow the recipe as usual, scoop the ready avocado cilantro lime dressing into an air-tight container, and refrigerate. As long as you’re keeping your avocado dressing sealed up tight, you’ll be able to keep it in the refrigerator for up to 2 weeks.

To Freeze: If you decide to freeze this dressing instead, it will keep for up to 3 months. Make sure your container is freezer-safe and seals properly.

Make it spicy: You can also add more spice by adding a few drops of your favorite hot sauce, some cayenne pepper, or any other spicy spice you prefer.

Ingredients

    • 1 large avocado
    • ½ cup chopped cilantro
    • ¼ cup olive oil
    • 2 tbsp lime juice
    • 1 garlic clove, minced
    • 2-4 tablespoons water
    • salt and black to taste

Directions

  1. Add the avocado flesh, cilantro, olive oil, lime juice, garlic and 2 tablespoon of water to a blender and blend until smooth.
  2. Season to taste with salt and black pepper.
  3. Add more water if needed.

Choose your avocado: Since you’ll be blending your ingredients anyway, go ahead and choose an almost overly ripe, mushy avocado. It will blend much better than a firm, barely ripe avocado.

For extra zing: You can add lime or lemon zest for an extra citrusy taste.

For variety: Swap the cilantro with another herb, add some heat, and adjust the consistency. This way, you can mix and match just about any dish with this versatile dressing.

Add a touch of cumin: The cumin will add depth of flavor, further enhancing this already yummy avocado dressing.

Too tangy? Add a touch of sweetness with a spoon of maple syrup or a little honey to balance the sharp citrus flavors.
