Another thing I love about this chicken cauliflower rice dish is how tasty it is thanks to the seasonings and of course the cilantro.
You don’t need much of the herb to give it a lot of flavor, which is why I absolutely love adding it into my recipes when I can.

Ingredients
- For the chicken:
- 1 ½ pounds skinless boneless chicken breasts, cut into strips
- 2 tbsp olive oil
- 1 ½ pounds skinless boneless chicken breasts, cut into strips
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 ½ tsp garlic powder
- ½ tsp ground cumin
- 2 red bell peppers, sliced
- 1 large red onion, sliced
- 3 garlic cloves, minced
- For the cilantro cauliflower rice:
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 4 cups cauliflower florets, riced
- 2 tbsp chicken stock
- juice and zest from ½ lime
- ½ cup fresh cilantro, chopped
- salt and black pepper, to taste
Directions
- Preheat oven to 400°F.
- Add the chicken, onion, bell peppers, minced garlic, chili powder, garlic powder, smoked paprika and cumin to a baking pan and toss to coat.
- Season to taste with salt and black pepper.
- Bake in preheated oven for 20-25 minutes or until chicken is no longer pink and vegetables are tender.
- To make the cilantro cauliflower rice, heat the olive oil in large skillet.
- Add the minced garlic and cook for one minute.
- Add the cauliflower rice and chicken stock.
- Season with salt and black pepper to taste.
- Stir to combine.
- Cover with a lid and cook for 3-5 minutes.
- Stir in the cilantro, lime juice and zest.
- Remove from the heat.
- Divide the cauliflower rice between bowls.
- Top with chicken and vegetables and serve.
