Ingredients

  • For cauliflower tater tots:
    • 2 cups riced cauliflower
    • ¼ cup coconut flour
    • 2 eggs
    • 1 tbsp olive oil
    • ½ tsp garlic powder
    • ¼ tsp onion powder
    • salt and black pepper to taste
  • For The Paleo Ranch Sauce:
    • ¾ cup homemade or store-bought paleo approved mayonnaise
    • ¼ cup unsweetened almond milk
    • ½ tsp dried dill
    • ¼ tsp garlic powder
    • ¼ tsp onion powder
    • salt, black pepper to taste

Directions

  1. To make the sauce, in a bowl, combine all the ingredients.
  2. Refrigerate until ready to use.
  3. To make the tater tots, preheat oven to 400ºF.
  4. Place the cauliflower rice in a microwave safe bowl and sprinkle with pinch of salt.
  5. Mix to combine.
  6. Cover with a lid.
  7. Microwave at 600W for 5 minutes.
  8. Remove from the microwave oven and allow to cool completely.
  9. Using a clean dish towel or cheese cloth, drain the cauliflower completely, removing as much water as possible.
  10. Transfer the cauliflower to a large bowl.
  11. Season to taste with salt and black pepper.
  12. Add the eggs, garlic powder, onion powder, coconut flour and olive oil and mix to combine.
  13. Line a large baking sheet with parchment paper.
  14. Scoop out mixture 1 tablespoon at a time and shape into tot forms.
  15. Bake in preheated oven for 25-30 minutes, until golden brown.
  16. Remove from the oven and allow to cool slightly.
  17. Serve with sauce.
