It all starts with making a delectable batch of paleo-friendly pancakes from scratch. You won’t find any refined flour or processed ingredients in this recipe. There’s just no need when these paleo ingredients already do the job well. Be careful with this recipe folks, those pancakes will disappear quickly so make sure you’re ready to make big batches!

Ingredients

  • For the pancakes:
    • 3 tbsp plus 1 tsp coconut flour
    • 1 tsp baking powder
    • 2 large eggs
    • 1 tbsp mashed banana
    • 1 tsp honey
    • ½ tsp pure vanilla extract
    • ½ cup unsweetened almond milk
    • melted coconut oil for greasing
  • For the bananas foster:
    • 1 large banana, sliced into ¼ thick slices
    • 1 tbsp coconut sugar
    • 1 tbsp coconut oil
    • 1 tbsp water
    • 1/8 tsp ground cinnamon

Directions

  1. In a bowl, place the coconut flour and baking powder and mix to combine.
  2. In another bowl, add the eggs, mashed banana, almond milk, vanilla extract and honey and whisk until well combined.
  3. Slowly add the dry ingredients to the wet ingredients and whisk to combine.
  4. Let the batter sit for 5 minutes so it can thicken.
  5. Lightly grease a non stick skillet with coconut oil.
  6. Heat the skillet over medium low heat until hot.
  7. Drop ¼ cup of batter for each pancake onto the hot skillet.
  8. Cook until small bubbles begin to form on the top.
  9. Carefully flip the pancakes and cook on the other side 1-2 minutes or until cooked through.
  10. Set aside.
  11. For the bananas Foster, melt the coconut oil over low heat in a skillet.
  12. Add the coconut sugar and cinnamon and stir until the sugar is dissolved.
  13. Add 1 tablespoon of water, cover and let the sauce simmer about 1-2 minutes.
  14. Add the sliced banana and cook for about 1-2 minutes per side or until the bananas are lightly caramelized.
  15. Serve the pancakes with bananas and sauce.
