You can use your choice of either chicken thighs or legs for this paleo turmeric chicken, which I love because they stay moist and juicy. The turmeric gives the chicken a nice golden yellow color, while also adding so much umami. Save this recipe the next time you need a high-protein lunch or dinner option.

Ingredients

    • 2 pounds chicken drumsticks or thighs
    • ½ tsp ground turmeric
    • 2 tbsp coconut aminos
    • 2 tbsp honey
    • 2 garlic cloves, minced
    • ½ tsp red pepper flakes
    • 1 tbsp olive oil
    • salt, black pepper to taste

Directions

  1. Preheat oven to 400ºF.
  2. In a bowl combine the ground turmeric, coconut aminos, honey, garlic, red pepper flakes and olive oil. Season to taste with salt and black pepper.
  3. Place the chicken in a shallow baking dish. Pour over the turmeric mixture and toss to coat.
  4. Bake the chicken in preheated oven for 30-40 minutes, turning halfway thorough cooking time and basting occasionally with pan juices, until cooked.
  5. Serve warm.
