If you’re a fan of meatloaf, then you’re going to absolutely love the recipe that I’m going to be sharing today. It’s for making bacon-wrapped paleo meatloaf skewers that are perfect for snacking or even as an appetizer at your next family cookout. The meatloaf itself is one of my favorite ways to make it paleo style, as it uses low carb ingredient options like almond flour, onion powder, and garlic powder to add a solid amount of healthy fats and flavor to the mix. Just make sure to use nitrate free bacon when wrapping your skewers to keep things 100% paleo. Other than that, prepare to be blown away by this recipe guys. It’s truly the perfect paleo summertime snack.

Ingredients

    • 1 pound lean ground beef
    • 1 egg
    • ¼ cup almond flour
    • 1 ½ tsp onion powder
    • ½ garlic powder
    • 1 ½ tsp dried parsley
    • 10 slices nitrate free bacon
    • 3 tbsp Paleo friendly homemade or store- bought ketchup (optional)
    • salt, black pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. Line a baking sheet with parchment paper. Set aside.
  3. In a large bowl place the ground beef, egg, almond flour, onion powder, garlic powder and dried parsley.
  4. Season to taste with salt and black pepper.
  5. With clean hands, mix the ingredients until well combined.
  6. Divide the mixture into 10 equal portions.
  7. Using wet hands, shape the meat around a skewer to form a 5-inch log of even thickness.
  8. Wrap with bacon.
  9. Place on the prepared baking sheet.
  10. Repeat with the remaining portions of meat.
  11. Brush each meatloaf skewer with ketchup (if using).
  12. Bake in preheated oven for 20-25 minutes.
  13. Remove from the oven and serve warm.
