Thankfully, not only can you make a 100% paleo-friendly meatloaf, but it’s also one of the best meatloaf recipes that you’ll ever try because it’s so flavorful. This recipe will show you how to make a bacon wrapped paleo meatloaf that everybody in your family will go nuts for. It’s loaded with everything that makes a paleo dinner great—two pounds of lean ground beef, almond flour, a savory mix of herbs and spices, and of course bacon.

Ingredients

    • 2 pounds lean ground beef
    • ½ cup almond flour
    • 1 tbsp onion powder
    • 1 tsp garlic powder
    • 1 large egg
    • 2 tbsp no sugar added tomato paste
    • 2 tbsp dried parsley
    • 1 tsp dried thyme
    • ½ tsp dried oregano
    • salt and black pepper, to taste
    • 10-12 thick bacon slices

Directions

  1. Preheat oven to 350°F.
  2. Line a loaf pan with parchment paper. Set aside.
  3. In a bowl place the beef, almond flour, onion powder, garlic powder, tomato paste, dried parsley, thyme, oregano and egg.
  4. Season to taste with salt and black pepper and mix to combine.
  5. Line the prepared loaf pan with slightly overlapping slices of bacon.
  6. Transfer the ground meat mixture into the prepared loaf pan, pressing the meat down to form into a loaf shape.
  7. Fold any overhanging bacon over the top of the loaf pan.
  8. Invert the meatloaf onto a baking sheet lined with parchment paper.
  9. Bake in preheated oven for 55-60 minutes.
  10. Remove the meatloaf from oven and let stand for 15 minutes.
  11. Cut and serve.
