Jalapeno poppers are pretty much the perfect snack choice for anyone out there who loves spicy foods. To make it even better, wrap it in bacon. Believe me when I tell you that bacon wrapped jalapeno poppers are the best kind of poppers. These are 100% paleo approved thanks to the combination of raw cashews, lemon juice, garlic powder, and onion powder. Together, they complement the bacon and jalapeno to bring out their natural flavors. This is one of those dishes that I never thought to make but it’s been a staple in my household ever since.

Ingredients

    • 8 thin bacon slices
    • 4 jalapeños, halved lengthwise and seeded
    • 1 cup raw cashews (soaked for minimum 4 hours)
    • 1 tbsp lemon juice
    • 1 tsp garlic powder
    • 2 tsp onion powder
    • salt to taste

Directions

  1. Preheat oven to 400°F.
  2. Rinse and drain well the cashew nuts.
  3. Place the cashew nuts, lemon juice, garlic powder and onion powder in a high powder blender and blend until smooth.
  4. Season with salt to taste.
  5. Stuff the peppers with the cashew nut mixture.
  6. Wrap each half with one slice of bacon.
  7. Place the jalapenos in a lightly greased baking dish.
  8. Bake in preheated oven for 25-30 minutes or until bacon is crispy and browned.
  9. Serve immediately.
