Bacon-lovers, you’re in for a real treat because this awesome double bacon ground beef paleo casserole is just what you need after a long day. We won’t be playing around with this recipe because 12 strips are going down—and trust me, that probably won’t be enough. Happens to me all the time. The cayenne pepper adds a touch of heat while the Italian seasoning or even just the dried parsley adds an earthy, fresh flavor to your lean ground beef. The cauliflower mashed potato made with nutritional yeast and unsweetened almond milk adds essential micronutrients and a rich, fluffy texture to your casserole that we know you’re going to love. I’ve tried serving this to guests and they don’t even realize it’s not made of potatoes until I point it out—that’s how great it is.

Ingredients

  • For the ground beef layer:
    • 1 tbsp olive oil
    • 1 medium onion, minced
    • 2 garlic cloves, minced
    • 1 pound lean ground beef
    • 1 tsp Italian seasoning or dried parsley
    • ½ tsp cayenne pepper
    • 4 slices no sugar, nitrate free bacon, chopped
    • salt, black pepper to taste
  • For the cauliflower layer:
    • 5 cups cauliflower florets
    • ¼ cup unsweetened almond milk
    • 1 ½ tbsp nutritional yeast
    • salt, black pepper to taste
  • For the topping:
    • 8 slices no sugar, nitrate free bacon

Directions

  1. To make the topping, lay out the bacon slices without overlapping in a cold non-stick pan.
  2. Cook over medium heat until the bacon slices reach the desired crispness.
  3. Remove from the heat and chop.
  4. Set aside.
  5. For the ground beef layer, in a large skillet heat the olive oil over medium heat.
  6. Add the onion and bacon and cook, stirring occasionally, for 3-5 minutes.
  7. Add the garlic and cook for 30 seconds.
  8. Add the ground beef and cook, stirring occasionally, until the beef is no longer pink.
  9. Add the Italian seasoning and cayenne pepper and mix to combine.
  10. Season with salt and black pepper to taste and remove from the heat.
  11. Set aside.
  12. Place the steamer basket in a large pot.
  13. Add 1 ½ cups of water.
  14. Place the cauliflower florets into the basket.
  15. Cover with a lid and cook over medium heat for 5 minutes or until cauliflower is fork-tender.
  16. Remove the cauliflower from the steamer basket and mash with a potato masher.
  17. Add the almond milk and nutritional yeast and mix to combine.
  18. Preheat oven to 350°F.
  19. Spoon the ground beef mixture into a lightly greased baking dish and top with mashed cauliflower.
  20. Bake in preheated oven for 30- 35 minutes.
  21. Remove from the oven.
  22. Sprinkle with cooked bacon and serve.
