It combines a bunch of the best tasting paleo ingredients you can think of into one ridiculously great tasting salad that makes for a perfect light lunch. It seriously doesn’t get much better than this—lots of lean protein from the chicken, fats from the bacon, and some green onion, garlic powder, and paleo mayonnaise helps to round up the whole package. This is one salad recipe that you’ll keep coming back to because it packs a lot of flavor without much prep time.

Ingredients

    • 2 cups cooked chopped chicken
    • 8 slices sugar free, nitrate free bacon
    • ½ cup homemade or Paleo friendly store-bought mayonnaise
    • 2 green onions, sliced
    • ½ tsp garlic powder
    • salt, black pepper to taste

Directions

  1. Lay out the bacon slices without overlapping in a cold non-stick pan.
  2. Cook over medium heat until the bacon slices reach the desired crispness.
  3. Remove from the heat and chop.
  4. In a bowl add the bacon, chicken, green onion, garlic powder and mayonnaise and toss to combine.
  5. Season to taste with salt and black pepper.
  6. Refrigerate for minimum one hour or until ready to serve.
