How to Make Healthy Paleo Mayo with Avocado Oil

Mayonnaise is easily one of my favorite condiments for sandwiches, especially when I make my own homemade paleo mayo. Since I use it on everything, store-bought mayo just wouldn’t do. I prefer my own so I can enjoy it as often as I want, guilt-free. One of my go to recipes as of late has been this healthy paleo mayo with avocado oil recipe. It’s made entirely from scratch, avoiding many of the processed ingredients usually found in store-bought mayos. Using avocado oil as the base of the recipe is a fantastic choice as well, considering it’s packed full of heart healthy monounsaturated fatty acids, along with an abundance of essential vitamins, minerals, and antioxidants. As soon as you try out this mayo, don’t be surprised when you find yourself craving sandwiches every day. I use every excuse I can to use this up!

Ingredients

    • 1 large egg, at room temperature
    • 1 tsp Dijon mustard
    • 2 tsp apple cider vinegar
    • 1 cup avocado oil
    • salt to taste

Directions

  1. Place the egg, mustard and apple cider vinegar in the blender cup or jar that just fits the head of your immersion blender.
  2. Add the avocado oil and allow to settle for 15 seconds.
  3. Place head of immersion blender at the bottom of cup and turn it on high speed.
  4. Do not move the head for 30 seconds or until a white, creamy, thick mayo forms at the bottom by the head.
  5. As mayonnaise forms, slowly tilt and lift the head of the immersion blender until all oil is emulsified.
  6. Season to taste with salt.
  7. Store in an airtight container in the refrigerator for up to 10 days.
