Just because you’re pressed for time in the morning doesn’t mean you have to sacrifice enjoying a nutritious and well-balanced breakfast. At least not when you follow great recipes like this one for making easy-peasy 2-ingredient paleo banana egg pancakes. One single banana and a couple of eggs are the only things you’ll need to whip up these pancakes (plus a bit of coconut oil for greasing). Don’t let the simplicity of this recipe fool you though. I’d easily rank these 2-ingredient pancakes amongst the best pancake recipes I’ve ever tried.

Ingredients

    • 1 large ripe banana
    • 2 large eggs
    • melted coconut oil for greasing

Directions

  1. In a bowl, mash the banana with a fork until completely smooth.
  2. Add the eggs and whisk until well combined.
  3. Lightly grease a non stick skillet with coconut oil.
  4. Heat the skillet over medium low heat until hot.
  5. Drop 1/8 cup of batter for each pancake onto the hot skillet.
  6. Cook until small bubbles begin to form on the top.
  7. Carefully flip the pancakes and cook on the other side 1-2 minutes or until cooked through.
  8. Serve warm.
