Zucchini muffins are a wonderful way to eat your vegetables, and when you make them the Paleo way you avoid some of the nasty stuff that goes into conventional muffins. No grains or dairy is used in these muffins, just wholesome ingredients that make you feel good after you eat them.
1. Chocolate Zucchini Muffins
Bam! Let’s start this list off with a whopping chocolate muffin that has a cup of zucchini in a dozen muffins. The fascinating feature of these muffins is that they clock in at just 69 calories, which doesn’t mean a thing on Paleo since there’s no calorie counting, but it just shows the sort of creation you can make and still not touch your calorie intake. The almond flour she’s using here is one way to make sure that you’re getting fiber with your muffins, something you can’t say for muffins made from all-purpose flour.
2. Double Chocolate Zucchini Muffins
Double bam! Let’s continue our list with double chocolate muffins, because if there’s one thing better than chocolate zucchini muffins, it’s double chocolate muffins. These muffins didn’t forget the zucchini, which is why they made it onto our list of zucchini muffins. They didn’t forget the chocolate either, or maybe they did and then made amends by doubling up on it. There’s cocoa powder mixed into the actual muffins, and then big dark chocolate chunks littered throughout. This means that it’s impossible to take a bite without getting chocolate, and very tricky to take a bite without getting a chocolate chunk.
3. Zucchini-Currant Muffins
Putting together zucchini and currants is not something that most muffin recipes do, which is one of the joys of being on Paleo. You’ll see all sorts of interesting flavor combinations, and you’ll think to yourself that you wouldn’t have thought of that. Then when you taste them you’ll be glad you stumbled upon it and gave it a shot. Such is the case with these muffins, which will have you reaching for a second helping after you polish off the first.
4. Zucchini Chocolate Chip Mini Muffins
Sometimes you don’t need the whole muffin to taste like chocolate, but it’s nice to have some chocolate chips dispersed throughout. That’s what’s happening here with these zucchini chocolate chip mini muffins. You’re getting delicious chocolate chips, and bits of zucchini baked into the muffin. Mini muffins are a lot of fun to eat, and you’ll be getting plenty of nutrition from these, you just might have to eat a few more than you normally would to make a full serving and get it to the size of a regular muffin.
5. Coconut Flour Zucchini Muffins
Coconut flour is one flour that you’ll want to get used to on Paleo because it shows up in tons of recipes. This is a lighter flour than almond flour, but it contains fiber just like almond flour does. This means that with these muffins you’ll have a light tasting muffin that is fiber loaded, rather than a muffin made from all-purpose flour that doesn’t have much in the way of nutrition and can actually send your digestive system awry. Use organic zucchini as instructed and you’ll be taking a lot of pesticides and herbicides out of your muffins.
6. Orange Cranberry Coconut Muffins
Even though zucchini didn’t make it into the billing on these muffins, there’s still a good amount of it used in them. It’s just that the other ingredients are a little more sexy than zucchini, and gobbled up all of the attention. It’s true that you won’t really taste the zucchini in these muffins, with the flavor of orange and cranberry taking precedent, so it is an aptly named muffin. But you can smile knowing that in addition to the fruit serving, you’re getting a veggie serving too.
7. Savory Zucchini, Bacon and Herb One Minute Muffins
Did you know you can make muffins in one minute? That’s what these muffins set out to do, and they’ve enlisted the help of zucchini to do it. They’ve also included one of the more popular Paleo choices, bacon, to help with the savory flavor. The way these get done in a minute is with the microwave, so you’ll have to decide if your Paleo philosophy allows for modern day luxuries. Once you taste these minute muffins you may be swayed to use a cheat like a microwave, even though it’s not something cavemen would have had.
