Lemongrass is a flavor most often associated with Vietnamese and Thai dishes. In this list, I have a dozen paleo-friendly lemongrass recipes to share with you from soups to salads to deliciously marinated meats. Dig in!
1. Grilled Flank Steak With Thai Style Chimichurri
This awesome flank steak is perfectly flavored from a marinade of olive oil, coconut aminos (to replace the tamari), garlic, salt, and pepper. The best part, though, is the chimichurri sauce made with plenty of fresh lemongrass, Thai basil, coriander, and more.
2. Lemongrass Beef Stew With Roasted Root Vegetables
Even hearty beef stews are fantastic with the fresh, springy flavor of lemongrass. This one needs just a few adjustments: use avocado oil for the vegetable oil, coconut aminos for the soy sauce, and coconut sugar instead of white sugar. The read is just good old veggies and beef. Yummy!
3. Vietnamese Restaurant-Style Grilled Lemongrass Pork
You don’t need to get Vietnamese takeout to get the fantastic flavors of grilled lemongrass pork. This version is simple to make on your own with lemongrass, shallots, garlic, fish sauce, coconut aminos (instead of tamari), honey, and fresh lime juice for glazing.
4. Lemongrass Chicken Satay With Almond Butter Sauce
This chicken satay is super simple and completely paleo-friendly without any adjustments. The flavors come from sesame oil, garlic, lemongrass, and ginger with apple cider vinegar and a delicious dipping sauce. The almond butter dip is rich with coconut milk.
5. Lemongrass Grilled Chicken With Sriracha Mayo
Grilled chicken is easy to flavor a thousand different ways, and one of my very favorite ways is this lemongrass grilled chicken with ginger, lime, garlic, and rice wine vinegar. Drizzle it with a homemade sriracha mayo and you’ll be in chicken heaven before you know it.
6. Tom Kha Gai Soup
Tom Kha Gai is a classic Thai soup with lemongrass, coconut milk, and chicken. This one is flavored with garlic, chili paste, kaffir lime leaves, black peppercorns, mushrooms, fish sauce, and lime juice. If you don’t consider the baby corn paleo-friendly, substitute another veggie of choice.
7. Lemongrass Chicken Curry
Don’t forget lemongrass in curries! This one is tasty with Vidalia onion, ginger, garlic, green curry paste, coconut milk, bone broth, coconut aminos, lemongrass, and lots of veggies. Don’t forget the chicken, which makes this curry protein-rich and complete.
8. Vietnamese Herb Salad With Lemongrass Chicken
This easy salad is a compilation of fresh veggies like red bell pepper, cucumber, and carrots along with herbs like fresh mint, cilantro, and Thai basil. I love fresh herbs in my salad—so flavorful! Serve it with lemongrass chicken and Vietnamese dressing, recipes included.
9. Grilled Sirloin Salad With Fresh Herbs and Thai Dressing
This salad has bright Thai flavors and will remind you of a hot bowl of pho—in salad form! Make it with beef top sirloin, fresh minced lemongrass, Asian fish sauce, coconut aminos, honey, onion, lime, and other fresh herbs and delicious vegetables.
10. Coconut Lemongrass Chicken
You’re going to love this coconut lemongrass chicken—so easy to make! You need boneless chicken thighs, red onion, lime juice, apple cider vinegar, fish sauce, lemongrass paste, Thai bird chilies, coconut milk, sea salt, oyster mushrooms, yellow pepper, and Daikon radish.
11. Four Hour Lemongrass Beef Short Ribs
Lemongrass is an excellent marinade ingredient, because meat soaks up its flavors really well, just like in this short ribs recipe. You only need an afternoon to marinate for this recipe, which is full of flavors like ginger, onion, orange, lime, fish sauce, coconut aminos, and chili flakes.
12. Thai Green Curry
This green curry dish is fresh and light with a homemade lemongrass curry paste—so good. The curry dish itself is made with lots of fresh vegetables of your choice. This blogger recommends a mix of asparagus and broccoli, with coconut milk, lime, and sesame oil.
