Chorizo, for the uninitiated, is a spicy Latin-style sausage that adds an amazing flavor to dishes and is an excellent compliment for tomatoes, eggs, veggies, and more. Try any of these paleo chorizo recipes and enjoy!
1. Pumpkin and Chorizo Chili
This delicious and nourishing chili is made with chorizo sausage as well as chicken, pumpkin, tomatoes, peppers, and plenty of seasonings. It’s easy to make and cooks in about an hour, with minimal attention to the stove—just stir occasionally and soak in the aromas!
2. Jalapeno and Chorizo Carrot Rice With Avocado
This nourishing meal is absolutely packed with veggie goodness, spicy protein, and healthy fats thanks to carrot, chorizo, cilantro, lime juice, diced jalapeno, chicken broth, chili powder, and avocado. Enjoy as a lunch or dinner, and add a pinch of cayenne for some more heat!
3. Chorizo Burger With Cucumber Slaw
This chorizo burger is made with spicy sausage, grass-fed ground beef, onion, garlic, butter, and a bit of paleo mayonnaise. Serve it up with a cooling and refreshing cucumber slaw made with onion, olive oil, apple cider vinegar, and salt and pepper. So simple, so good.
4. Rustic Chorizo Pasta
This is a super easy pasta made from spiralized zucchini (or if you don’t have a spiralizer, a vegetable peeler with make wider but perfectly acceptable noodles) and a homemade chorizo sauce with sweet onion, diced tomatoes, sea salt, and pepper. That’s really all you need!
5. Avocado Stuffed Chorizo Meatloaf
This fantastic recipe is not only for a meatloaf stuffed with sliced avocado, but it’s for a meatloaf stuffed with sliced avocado and then, if you follow the serving suggestion, wrapped in bacon! Avocado is the perfect cooling flavor to balance the spiciness of the sausage.
6. Chorizo, Kale, and Sweet Potato Frittata
If a frittata is more your style in the mornings, here’s my answer to that. This frittata is made with chorizo, sweet potato, red onion, kale, and salsa/cilantro to serve. It’s a protein-rich, flavorful, and easy 1-dish meal that could be a breakfast, lunch, or a dinner with no complaints from the family.
7. Chorizo and Poblano Breakfast Skillet
Breakfast skillets are a great way to start your day, and an easy morning meal. It’s a single dish, and you can change up the proteins and veggies to suit your liking. This one uses chorizo, poblano peppers, eggs, bacon, bone broth, kale, mushrooms, cilantro, garlic, onion, and more.
8. Mexican Brunch Skillet With Sweet Potato, Chorizo, and More
This skillet is more than just chorizo and sweet potato. It also has aubergine and runny eggs, as well as avocados, garlic, onion, tomatoes, balsamic vinegar, fresh herbs, lime, and other delicious ingredients. If you eat dairy, feel free to top with a bit of goat cheese or crème fraiche.
9. Baked Eggs With Tomato and Chorizo
One of my favorite things to make for breakfast or lunch on chillier days is baked eggs in ramekins with other goodies, like in this recipe with chopped tomatoes, chorizo, garlic, oregano, and paprika. They’re easy, flavorful, and take just about no effort. Just dump everything in and bake! Parmesan optional.
10. Paleo Chorizo Burger Buns
This is one of the most interesting paleo bread or bun recipes I’ve ever come across, and that’s thanks to a half cup of chorizo meat right in the batter! The buns are also made with almond meal, coconut flour, and flaxseed meal, and you can bet they’re full of flavor.
11. Chorizo, Spinach, and Sweet Pepper Egg Muffins
If you’re into eggy breakfasts but don’t have a lot of time in the morning, these are your new go-to breakfast. These muffins with coconut oil or fat of choice, garlic, chorizo, spinach, and sweet pepper can be made ahead of time!
12. Patatas Bravas
This is a traditional Spanish tapas dish using potatoes, rosemary, sweet paprika, and a delicious sauce made from chorizo, red onion, parsley, roasted red peppers, cherry tomatoes, and apple cider vinegar. It makes a hearty entrée full of flavor and culture. Yum!
13. Smoky Chorizo and Kale Soup
Who says your chorizo has to be part of a hash or a burger? You can enjoy this spicy sausage in soup, using this recipe with brown onion, garlic, potatoes, kale, smoked chorizo, and chicken stock. Bonus points if you use homemade bone broth (any type) as your stock.
14. Chorizo With Chimichurri and Olives
This dish would make a lovely side or even an entrée for a lunch or informal dinner. Chorizo is a flavor powerhouse on its own, and when you add chimichurri? Let’s just say things get a little wild. This dish is made with raw and fermented red wine vinegar, fresh oregano, and more.
15. Plantain Chips With Chorizo, Guacamole, and Pickled Jalapenos
We all know fermented veggies are good for us, but how can you incorporate them into your meals? This appetizer or party snack with plaintain chips, homemade delicious guacamole, and spicy pickled jalapenos is the perfect answer to that question.
16. Homemade Mexican-Style Chorizo
This chorizo recipe has a simpler ingredient list, but is no less flavorful with cloves, coriander, cumin, ancho chili powder, apple cider vinegar, and more. Use it in any of your favorite chorizo recipes, or even just cook it up and serve with eggs for breakfast.
17. Spicy Baked Eggs With Chorizo
This recipe is made in a giant skillet for an easy breakfast, lunch, or dinner that’s filling, nourishing, and absolutely bursting with spicy flavors. Onion, garlic, yellow pepper, tomatoes, honey, spinach, smoked paprika, eggs, and dry cured chorizo will have your mouth watering.
18. Homemade Fresh Chorizo
So you’ve taking in a bunch of ideas using chorizo sausage, but what if you want to make your own? You can! This recipe is for chorizo sausage seasoned with a blend including sweet paprika, chili powder, cinnamon, oregano, cayenne pepper, cumin, garlic, and other flavors.
19. Chorizo, Sweet Potato, and Swiss Chard Wrap
Wraps are convenient and tasty, which leads paleo folks to come up with all different kinds of ways to approximate them without grains. This version uses Swiss chard leaves filled with chorizo, onion, garlic, sweet potato, and chili flakes. Sour cream optional.
20. Spicy Mussels in Tomato Chorizo Broth
This elegant dish looks difficult and complicated to make, but it’s not! Serve up some mussels with a homemade sauce from chorizo, garlic, red pepper flakes, diced tomatoes, white wine, dried thyme, salt, and pepper. These babies are yours in 30 minutes.
21. Paleo Chorizo Paella
Paella is a Spanish dish usually made from rice, but this version uses cauliflower instead and flavors is with chorizo, shrimp, chicken thighs, paprika, oregano, onion, Roma tomatoes, chicken bone broth, salt, garlic, and the special key ingredient for paella: saffron!
22. Warm Brussels Sprouts and Chorizo Salad
This salad is made with a pre-made package of bacon Brussels sprouts, but you could just as well use your own Brussels sprouts and a few strips of crumbled bacon. The flavor here is savory and incredible, and you can adjust the heat with cayenne pepper.
23. Chorizo and Sweet Potato Salad
This recipe calls for machego cheese, but you can leave it out if you’re dairy free and enjoy this salad with the perfect flavors of chorizo, sweet potato, lemon, baby arugula, red onion, and Marcona almonds. This salad is a packable lunch perfect for work, too!
24. Chorizo Meatloaf
This meatloaf is simpler than our avocado-stuffed meatloaf and is covered in a flavorful glaze. It also features gelatin (use grass-fed gelatin!), which is an excellent source of collagen and is great for your hair, skin, nails, bones, and gut.
25. Paleo Mexican Gumbo
